Any self hosted alternative to Evernote? Never used Evernote, but sounds nice.

Check my https://notes.sciter.com/ - it is not using external storage but your own hard drive.

Just in case: I am one of three initial Evernote developers who implemented the idea of Stepan Pachikov : https://notes.sciter.com/2017/09/11/motivation-and-a-bit-of-...

I use Tiddlywiki and Resilio Sync: https://philosopher.life/

I haven't found good alternatives for my use cases, but depending on your needs, you can host Paperworks[1] on Sandstorm[2].

Synology also has a DSM app "Note Station".[3]

note station is actually decent enough. there's a web clipper, desktop app, mobile apps, and its pretty much a complete clone of evernote. they even managed to add text highlights before evernote did.

the only thing stopping me from importing everything into it is that there is only 1 export option. they need to add a html option and maybe plaintext

Joplin is a good open source alternative. You can sync it to a self hosted backend like Nextcloud though.
