It wouldn't stop deceit if done at the engineering level, but one thing Tesla could do to gain trust in its logs is to let its drivers digitally sign a version of them. That way, if it ever lands in court (or some other form of arbitration), both sides could verify that Tesla's version and the driver's version match up -- that neither side has tampered with anything.
