I haven't used Django(REST) much since I did the Réimnigh site, though I did some Flask on the other two unpublished webapps. I don't know which I should include, etc., so I'd appreciate any advice on that. And if I should make sure I'm up-to-date on Django before including it even.

Don't sell yourself short man. I'd value a self taught programmer in their 40s with an MBA over a recent MIT CS grad any day.
I've hired a few folks with "non-traditional" backgrounds and usually the biggest indicator of success is previous work experience, regardless of industry.
