If they didn't include that (and the music video) in this documentary then they've failed the audience badly. Not because it has anything to do with the subject really, but for missing the opportunity to bring that video to more people.
First, afaik Apple did not produce Jurassic Punk, it's just available on iTunes.
Second, Stu has every right to put himself in the spotlight, given that he's writing on his own personal blog. He went on to be a key member of the "Rebel Mac Unit," and his own recollections about Steve Williams are interesting for anyone who geeks out about ILM history.
This guy worked on one of the worst tragedies in the Star Wars universe, the added scene where Han Solo steps on Jabba the Hutt’s tail. That he was so inexperienced and allowed to work on that scene explains a lot.
IMHO it was mainly the scripts that sucked in the “new” Star Wars and the retconning in the remastered stuff. I didn’t personally object too much to the quality of the added scenes, even though they could have just skipped them.
