Yeah but I assume that you'd be pinning the base image, in addition to whatever you apt install. If I install, let's say Debian 6, can I use `apt install package=version ` to install the 2011 versions of most packages?

I don't know, but it would be really great if you could do
apt rollback=2011-01-01
And have everything installed exactly as it would be if I had installed everything in 2011-01-01 after running `apt update`.
I think this is basically what Nix is?!
